First things first though, you may be asking… what is a vegetarian frittata? It’s an egg-bake filled with yummy vegetables, herbs, and a bit of cheese. If you’re not a savory breakfast person, it’s a quick weeknight dinner option.
Ingredients:
- 6 large eggs
- 100 gr. Osogovski mixed or sheep cheese
- 120 ml. milk or Osogovski sour cream
- 150 grams mixed vegetables (bell peppers, spinach, onions, tomatoes, mushrooms)
- 1 spoon olive oil
- 1/2 teaspoon dried thyme or oregano
- Salt and pepper to taste
Instructions:
STEP I
Heat olive oil in an oven-safe skillet over medium heat. Sauté the chopped vegetables until tender, about 5-7 minutes. Season with salt, pepper, and dried thyme or oregano.
STEP II
In a bowl, whisk together eggs, milk or cream, salt, and pepper.
STEP III
Pour the egg mixture over the vegetables in the skillet. Sprinkle shredded cheese on top. Bake in a preheated oven at 190°C for 20-25 minutes, or until the frittata is set and the top is golden brown.

Allow the frittata to cool slightly before slicing. Enjoy!
